Part One: How to Delete Songs from iPod touch

If you have no more space for iPod touch, and want to take some songs off your iPod, here is a solution that may help you to delete the unwanted music right from iPod touch without bring iTunes up.

Open the Music app on iPod touch > Choose the Songs tab > Find the song you want to delete > Slide over that song and you will see a red "Delete" button > Click it to delete songs from your iPod touch.

Part Two: Delete songs from iPod nano, shuffle, classic

If you want to remove a song from iTunes library but keep it on the iPod, you can change the update option of your iPod to "manually manage music and videos" (this setting isn't available for 1st and 2nd generation iPod shuffles, you can't delete from iTunes and keep the songs on the these).
