Go to Settings > iTunes & App Store. Tap your Apple ID (you might need to sign in your Apple ID), and then tap Subscriptions. There you can see the option of iTunes Match. Tap Cancel Subscription and iTunes Match are now disabled. The subscription will stop at the end of the current billing cycle.
